If you want to change the infill for example for a part of the print add a Modifier. Click on the object with your right mouse and choose a modifier. Screenshots are from Bambu Studio but it is also possible so far I know with Cura and Prusa Slicer.
Go to your Objects list and click on the modifier. You can now change the properties.
